Stuffed Squashes With Caesar Chicory Salad
I had to revise this recipe because the squash required baking and I just moved into a new apartment and my gas isn’t installed yet. So I decided to cube the squash and saute it with some of the red onion provided in the ingredients. It came out so tasty!
I placed the meat and bulgur mix on top of the sauteed squash and voila!, the meal was done and it tasted exceptional! One thing I love about Blue Apron is that is introduces me to new ingredients that I often ignore in the grocery store. Now that I know what a chicory salad and bulgur tastes like, I am going to buy it at the store!
Chicken Tikka Masala Over Minted Cucumber Salad & Naan I’ve never been a fan of Indian food. The flavors are far too strong and often turn my palette off. So when I saw that this was one of the recipes for the week, I was sad and decided to cook it last. I know, I’m a brat!
Unfortunately, waiting to make this meal made me sacrifice my fresh veggies. The cucumber and mint had gone bad, so I decided to just make the Chicken Tikka Masala without the salad.
Imagine my surprise when the dish was pleasing to my mouth! The tomato flavor reminded me of a pasta dish and dipping the naan in it was a fun way to make sure no sauce was left behind.
Cod With Pickled Grapes & Summer Succotash This dish was my pride and joy. It looked like it was going to be the most difficult to recreate, but it wasn’t! That’s another thing I love about Blue Apron–if you follow the directions, your meal will come out the way it looks on the professional photos!
At first, I was going to avoid the grapes, but it was such a surprising sweetness with a tart kick. I will be making this dish again on my own!
